After cutting the potatoes, soak them in water to wash away the starch on the surface . This simple step will make them crispy.
Wipe off the excess water thoroughly and coat the potatoes evenly with oil to make them crispy. A good rule of thumb is to use 1 teaspoon of oil per potato.
By cutting them to different sizes, you can create a texture that is just like the fries you get at a restaurant. Have fun trying out which cuts are closest to the texture of the fries you get at each restaurant.
