After graduating from Le Cordon Bleu's advanced cooking and pastry course, he gained experience in the food and beverage industry at French restaurants and patisseries, and after obtaining the international Q Grader certification as a coffee appraiser, he joined Horiguchi Coffee, a leading specialty coffee company. All recipe tests were conducted using two cups, but the amount of beans was based on the amount in the instructions, and the trends were the same for other cup sizes.
For some beans that you want to brew stronger, we recommend adding 20% more.
My general impression after trying various things is that cheap, low-grade beans or lightly roasted beans go well with daily brew, while high-quality beans or dark roasted beans go well with brew like a pro.
I also tried low-temperature extraction at 84°C using a custom recipe, but in many cases it did not produce the best extraction, and I felt that the two template extraction recipes were superior.
When manually dripping with low-temperature water, it tastes better if you pour the water slowly and at a slow pace, but with the mocca you cannot change the pouring settings, so perhaps this is what made it difficult to get the coffee to work with a custom low temperature setting.
